A little history...
Dr. J. Walker’s California Vinegar Bitters was created around 1849 by Joseph Walker, an English-born physician who settled in California during the Gold Rush era. Walker developed the herbal preparation in the San Joaquin Valley using vinegar rather than alcohol as its base. San Francisco druggist Richard H. McDonald recognized its commercial potential and began manufacturing and distributing it through R. H. McDonald & Company. Promoted as the “only temperance bitters known,” the product appealed to customers who objected to the high alcohol content found in many nineteenth-century patent medicines. By the 1870s and 1880s, California Vinegar Bitters was sold nationally and internationally through McDonald’s offices in San Francisco, New York and London. Colorful advertisements claimed the “purely vegetable” tonic could treat digestive problems, liver complaints and numerous other ailments, although these broad medical claims were not scientifically established. The business declined during the 1890s following financial problems involving the McDonald family, and advertisements for the remedy soon disappeared.
